by Andrew Saladino
February 3, 2021

This Sunday is game day, but you don’t have to be a football fan to enjoy the Super Bowl. In fact, we can think of a few other reasons to join in on the fun–the food, the company, the commercials…and yeah, did we say the FOOD? We’re thinking cheesy nachos, saucy buffalo wings, an assortment of potato chips, and of course, crunchy, fried finger foods! We’re serving up all of this delicious goodness–with a twist.

We know what you’re thinking, and no, these are not slimmed down diet version recipes. So turn your frown upside down because these healthier game day recipes will keep you light on your toes, and will definitely be a touchdown with your crew. So let’s kick it off with four of our favorite air fryer recipes!

Super Bowl Snackdown - Air Fryer Mashed Potato Balls

Air Fryer Mashed Potato Balls

YIELD: 4-6 SERVINGS    —   TOTAL TIME: 20 MINS

Ingredients

  • Olive oil cooking spray
  • 1/2 cup ground pork rinds*
  • 1/2 tsp dried oregano
  • 1/4 tps garlic powder
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup egg whites
  • 1 1/2 – 2 tbsp grated parmesan cheese (set aside 1 tbsp)
  • 2 cups cold leftover mashed potato

Instructions

  1. Preheat your air fryer as required to do so in your manual.
  2. In a shallow plate, whisk to combine bread crumbs, parmesan cheese, oregano, garlic powder, black pepper, and salt. Prepare egg whites and remaining parmesan cheese on two separate plates.
  3. Remove mashed potatoes from the refrigerator. Using either a small spoon or cookie scoop, scoop potatoes and form them into a ball. Place onto a plate and repeat.
  4. Roll each ball in the parmesan cheese (only), followed by the egg whites, and then into the bread crumb mixture. Repeat for all potato balls.
  5. If your air fryer comes with an elevated crisper plate or tray, insert it into the basket. Lightly spray the plate or basket with cooking spray.
  6. Place the potato balls in a single layer and lightly spray the tops with cooking spray. Air fry at 390 F for 10-15 minutes or until the potato balls are golden brown but not burned. Be sure to lightly shake the basket 3-4 times during cooking.

We recommend serving them warm with a side of plain nonfat Greek yogurt and a dash of paprika!

*Notes:

  • You can also use panko or regular bread crumbs if you prefer a non-gluten-free breading.
  • If you require two batches to complete frying, be sure to keep the second batch of potato balls in the refrigerator to ensure that they remain cold and firm prior to air frying!

  2. Pat dry the chicken wings if they are especially wet before placing them in a single layer in the air fryer basket.

Easy Caribbean Jerk Sauce

  • Transfer to a small saucepan and heat over medium heat. Allow it to come to a light simmer before reducing to low heat. Continue to cook for another 2 minutes.
Remove from heat and place sauce in a large bowl. Add wings and toss with tongs to combine.

Super Bowl Snackdown - Air Fryer Sweet Potato Chips

Air Fryer Sweet Potato Chips

YIELD: 4 SERVINGS    —   TOTAL TIME: 1 HOUR

Ingredients

  • 2 medium-sized sweet potatoes, thinly sliced (1-2mm)
  • 1 tbsp extra-virgin olive oil
  • Dash of salt

Instructions

  1. Preheat your air fryer if as required to do so in your manual.
  2. Soak sliced sweet potatoes in a large bowl of cold water for 20 minutes. Drain, then pat dry with a paper towel.
  3. Place slices in a bowl, and toss with oil until lightly coated. Lightly sprinkle with salt.
  4. Lay sweet potato slices in the air fryer in a single layer, slightly overlapping. Air fry at 350 F for 10-15 minutes depending on how thin your slices are. Shake the basket halfway and keep your eye on it so they don’t burn!
  5. Remove the chips and place them on a cooling rack. Your sweet potato chips will get crispier as they cool.
  6. Enjoy as-is or sprinkle with spices to add different flavors. We recommend cayenne and paprika for a spicy kick or brown sugar and cinnamon for something sweet!

Super Bowl Snackdown - Gluten-Free Air Fryer Blooming Onion

Gluten-Free Air Fryer Blooming Onion

YIELD: 6-8 SERVINGS    —   TOTAL TIME: 25 MINS

Ingredients

  • Olive oil cooking spray
  • 1 large yellow or sweet onion
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 2 tsp hidden valley ranch seasoning
  • 2 eggs beaten
  • 1/2 cup almond milk (or milk of choice)

To Prepare The Onion:

  1. Rinse and peel the onion.
  2. Hold the onion on its side and trim off the end that is not the root.
  3. Place the onion cut-side down. Starting from the root about 1/2″ down, make 4 quarter slices in a downward direction. Be careful to not to start at the root, as we want that to remain intact.
  4. Slice the halves, creating 8 individual petals. Once again, cut each petal in half. You should now have 12-16 slices, depending on the size of your onion.

Instructions

  1. Preheat your air fryer as required to do so in your manual.
  2. Carefully place the cut onion in a large, deep bowl, root side down, and gently separate the petals without detaching them.
  3. In a small bowl, whisk together both flours and seasonings. In a large bowl, beat together the eggs and milk.
  4. Pour the flour mixture over the onion, making sure to coat each petal well. Shake the excess back into the bowl.
  5. Place the onion in the bowl with the egg mixture. Spoon the egg over the onion, making sure to coat it well.
  6. Bring the onion back to the flour mixture for a final coating and shake off any excess flour. Lightly spray the air fryer basket with cooking spray before placing it in the onion. Cook at 400 F for 10-15 minutes or until crisp.

We recommend serving straight out of the air fryer to enjoy optimal crispiness. Tear and dip into your favorite sauce or snack on them as is!
