KCK’s Super Bowl Snackdown – 4 Game-Day Recipes To Make In Under 45 Minutes

Our Super Bowl Snackdown continues, and we’ve saved the best for last! These recipes require 45 minutes or less and are quick and easy to throw together. Our game-winning tip? Complete all of the prep work the night before so that you won’t miss a second of the game! You can even batch the cocktails and create a ‘Make Your Own’ drink station. So chop, peel, and dice because you’ve worked hard to prepare for gameday and that corner sofa seat has your name written all over it.

Super Bowl Snackdown - Baked Buffalo Cauliflower Bites

Baked Buffalo Cauliflower Bites

YIELD: 3-4 SERVINGS    —   TOTAL TIME: 44 MINS

Ingredients

  • 1/2 tbsp + 1 1/2 tbsp olive oil
  • 1/2 large head cauliflower, cut into florets
  • 1/4 cup almond flour
  • 1/4 tsp garlic powder
  • 1/2 cup buffalo sauce (we love Frank’s Red Hot!)
  • Low fat ranch dressing (optional)

Instructions

  1. Preheat the oven to 425 F.
  2. Place cauliflower florets in a large bowl and toss with half a tablespoon olive oil. Add almond flour and garlic powder, and toss to evenly coat.
  3. Remove from the bowl and arrange the florets in a single layer on a baking sheet lined with parchment paper. Bake on the center rack for 25 minutes.
  4. In another bowl, whisk together the buffalo sauce and olive oil. Add the cooked florets and toss gently with tongs until evenly coated.
  5. Return the cauliflower to the baking sheet in a single layer. Bake for another 15 minutes. In the final 5 minutes, set the oven on broil. Keep an eye on it so it does not burn! Serve hot with low-fat ranch dressing.

Super Bowl Snackdown - Chicken Avocado Nachos

Shredded Chicken & Avocado Nachos

YIELD: 6-8 SERVINGS    —   TOTAL TIME: 44 MINS

Ingredients

  • Olive oil cooking spray
  • 12 (6-in.) low-carb tortillas, sliced into 8 wedges
  • 2 cups rotisserie chicken, shredded & skin removed
  • 2 tbsp lime juice (in a spray bottle)
  • 1/4 cup diced red onion
  • 1 1/2 cups shredded Mexican cheese blend
  • 1/2 cup canned black beans, rinsed and drained (optional)
  • Toppings: sliced avocado, sliced tomatoes, shredded lettuce, cilantro, plain nonfat Greek yogurt, pickled jalapeños

Instructions

  1. Preheat oven to 375 F.
  2. Arrange tortilla wedges in a single layer on 2 baking sheets lined with parchment paper. Lightly coat with cooking spray and sprinkle with 1/4 teaspoon of salt. Bake at 375 F for 12-14 minutes or until crisp and lightly browned. Allow to cool, then spritz lightly with lime juice for a zesty kick!
  3. Begin building nachos on a baking tray lined with parchment paper. Layer tortillas with chicken, onion, cheese, black beans, more cheese. Bake at 350 F for 10-15 minutes until cheese melts.
  4. Top with sliced avocado, sliced tomatoes, shredded lettuce, cilantro, plain nonfat Greek yogurt (in place of sour cream), and pickled jalapeños if desired. Serve warm.

Super Bowl Snackdown - Jalapeno Margarita

Jalapeño Margarita

Ingredients

  • 1 1/2 oz jalapeño infused tequila
  • 1 oz lime juice
  • 1 oz Cointreau
  • 3/4 oz agave
  • 3 oz club soda
  • 1 tbsp tajin seasoning
  • Lime wedges

For Jalapeño Infused Tequila:

  • 2 lbs jalapeños
  • 750 ml clear tequila

Instructions

  1. Rinse and cut jalapeños into quarter-inch thick slices. Divvy up the jalapeños and place them in mason jars. Fill mason jars with equal amounts of tequila and set them aside in the fridge for at least 8 hours.
  2. When ready to make margaritas, strain the infused tequila to remove jalapeño and seeds.
  3. For a spicy rim, prepare two shallow plates. Place a teaspoon of lime juice in one and the tajin seasoning in the other. Dip the outer rim of a large rocks glass in the lime juice and then into the seasoning. Set aside.
  4. In a Boston shaker, add tequila, lime juice, triple sec, and agave. Add ice and give it a good shake.
  5. Add ice to your rocks glass and strain the cocktail into it. Top off with club soda. Garnish with a lime wedge and enjoy!
  6. If making a large batch of margaritas, mix everything as above and omit the club soda. Prepare the ‘Make Your Own’ drinks section and arrange the spice, lime, and club soda for the guests to customize their own cocktails!

Super Bowl Snackdown - Bloody Mary

Bloody Mary

Ingredients

  • 4 1/2 oz V8 Spicy Hot juice
  • 1 1/2 oz Tito’s Vodka
  • 4 dashes Worcestershire
  • 2-3 dashes Tabasco
  • Pinch of salt and pepper
  • Optional toppings: lime wedges, pickles, bacon strips, pickled pearl onions, olives, and anything you like!

Instructions

  1. In a Boston shaker, add the V8 juice, vodka, Worcestershire sauce, salt, and pepper. Add ice and give it a good shake.
  2. Add ice to a pint glass and strain the cocktail.
  3. Prepare the ‘Make Your Own’ drinks section and arrange the toppings for guests to customize their own cocktails!
